Celebrate America and a Recipe

We had a great day celebrating our country yesterday!  We spent most of the afternoon and night at Kevin's sister's house.  She has a big party with about fifty people every year.  It was great!

We were so busy having fun that I didn't take any pictures (well, except one mildly not so hot one of me and KT).  Take my word for it: we had fun!  We swam for hours, played pool volleyball, enjoyed a delicious cook out, and watched some great fireworks.

Speaking of food, this is one of the things we took:

Crunchy Romaine Toss

My grandma has always made this salad and we love it!  I had some people ask for the recipe yesterday and I thought I'd share it with you, too.

Salad:
Romaine Lettuce
1 Head of Broccoli
4-6 Spring Onions, Sliced

Topping:
1 Package Ramen Noodles
1 Cup Chopped Walnuts
4 T butter

Dressing:
1 Cup Sugar
2/3 Cup Oil
1/2 Cup Red Wine Vinegar
3 Tsp. Soy Sauce
Salt and Pepper to Taste

To Make Topping:
Crush Ramen noodles and saute with chopped walnuts and butter.

To Make Dressing:
Combine all ingredients and bring to a boil while stirring.  Immediately remove from heat when dressing begins to boil.

Toss salad with topping and dressing.

This dressing is the best!  We've even used it to marinate steaks.

Also, today is Kevin's dad's birthday.  We're looking forward to celebrating this weekend.

Happy Birthday, Roy!  We love you!
